After a long winter, rhubarb is one of the first vegetables (or fruit, to some!) to push its way through the freshly thawed soil. Once a plant is established, its hardy stalks, or petioles, will return dutifully each year for your harvest pies and tangy jams or compotes!
Storage
Rhubarb can be kept for up to three weeks wrapped in foil in the refrigerator.
Seasonality
Wisconsin Rhubarb is typically found in May through late June, with some variation between Northern and Southern Wisconsin.
Prep Tip
Chop and freeze any leftover rhubarb for smoothies throughout the year.
