5 Quick Cucumber Salads

Make these 5 quick cucumber salad recipes for potlucks, dinners, and snacks.

Cucumbers herb salad
Salad of sliced cucumbers with fresh herbs.

Cucumber Salad (Dill Style)

1 cucumber, sliced thin

1 sweet onion, sliced thin

2 tablespoons sour cream

2 tablespoons mayonnaise

2 tablespoons minced dill

salt and fresh ground black pepper

Mix sour cream, mayonnaise, dill, salt and pepper. Add cucumber and onion. Mix well.  

Cucumber radish salad
Salad of sliced cucumbers and radishes in a white dressing.

Cucumber Salad (Southern Style)

1 cucumber, sliced thin

1 sweet onion, sliced thin

5 small radishes, sliced thin

2 tablespoons mayonnaise

1 teaspoon vinegar

1 tablespoon chopped fresh herbs (dill, parsley, chives, chervil, or celery)

salt and fresh ground black pepper

Mix mayonnaise, vinegar, herbs, salt and pepper to taste. Add cucumber and sweet onions. Mix well. The flavors will mix and taste better over time.

Cucumber Salad (Thai Style)

1 cucumber sliced thin

2 tablespoons thai sweet chili sauce like Mae Ploy

1 tablespoon rice wine vinegar

1 tablespoon fish sauce (optional)

Mix sweet chili sauce, rice wine vinegar and fish sauce in a large bowl. Add sliced cucumber. Mix well. The flavors will mix and taste better over time.

Salad of chopped cucumbers with sesame seeds.

Cucumber Salad (Japanese Style)

1 cucumber sliced thin

2 tablespoons ume-shisho furikake

Slice cucumber and lay slices on a plate or cutting board in a single layer. Sprinkle with ume-shisho furikake and let sit for 10 minutes. Transfer to a bowl to serve. 

Cucumber Salad (Mediterranean Style)

1 cucumber

2 ripe tomatoes

1 tablespoon Basalmic vinegar

3 tablespoons Olive oil

3 tablespoons fresh minced herbs like parsley, celery leaf, mint, basil, or oregano

Fresh-ground black pepper and kosher salt

Slice the cucumber in half and remove the seeds with a spoon. Dice into 1 cm (0.25 inch) cubes. 

Cut out the core of the tomato. Remove the seeds and water with a spoon. Dice into 1 cm (0.25 inch) cubes. 

Mix balsamic vinegar, olive oil and salt to taste. Add diced cucumber, tomato, and minced herbs. Mix well.
